It is also used as an ingredient in many experimental dishes such as delicious breads, biscuits, stuffings, marinades, risotto, creamy dressings and dips. Pumpkin seed oil production: 1. Pumpkin seeds are sown in the first weeks of May in the fields of the Slovenian regions Styria and Prekmurje. This area is known as one of the sunniest regions of Europe and is also well recognised by very good white wines. 2. Harvesting takes place in the autumn. The seeds are pulled out of the pulp either manually or with machines. They are then cleaned and dried. 3. Dried pumpkin seeds come to our mill in Slovenska Bistrica, where they are heated and ground up before processing. 4. Water and salt are added and the mass is then roasted in big pans whilst being constantly stirred. The roasting process is crucial – a few minutes or a few degrees more or less and the taste can be completely different. 5. The roasted mass is than pressed with a high pressure and the oil is filled in containers where it is kept for 3 weeks, allowing the sediments to settle to the bottom. After this we finally fill the bottles. |
