Styrian pumpkin soup
Ingredients:
100 g chopped onion
400 g Hokkaido pumpkin pulp (flesh)
40 g butter
2 peeled tomatoes
1L chicken or vegetable stock
1 tsp curry powder
GEA Pumpkin seed oil
Salt
Black pepper
Cooking instructions:
Heat the chopped onion in butter in a pot. When it is golden brown, add the flesh of Hokkaido pumpkin cut in pieces. Then roast for several minutes. Add curry powder, roast all together for a few minutes again and add cut tomatoes and stock. Season with salt and black pepper and cook for another 15 minutes.
Mix everything and serve. Add some pumpkin seeds for decoration.
Pumpkin seed oil pesto
Ingredients:
125 ml GEA Pumpkin seed oil
50 g fresh basil
60 g pumpkin seeds
40 g crushed almonds or pinjoli
1 garlic clove
Salt
Cooking instructions:
Crush all the ingredients in mortar and use pesto on fresh homemade pasta.
Pumpkin seed oil dressing
Ingredients:
4 tblsp GEA Pumpkin seed oil
4 tblsp GEA olive oil
4 tblsp balsamic vinegar
1 tblsp mustard
1 small chopped onion
Salt
Black pepper
Cooking instructions:
Mix all the ingredients together and put the dressing over sliced tomatoes, red peppers or cucumbers or a mixture of these vegetables.
Ingredients:
1 kg potato
2 tsp of vinegar
Black pepper
3 tsp of mustard
3 tsp of GEA Pumpkin seed oil
Onion
Cooking instructions:
Peel boiled potatoes and slice them into thin slices. Add vinegar, GEA Pumpkin seed oil, black pepper, salt, mustard. Add thin-sliced onion at the end and mix well.
Have a good meal.
Potato dressing with pumpkin seed oil
Ingredients:
150 g boiled potatoes
1 chopped garlic clove
50 ml GEA Pumpkin seed oil
30 ml apple vinegar
Salt
Garden Salad Leaves
Cooking instructions:
Crushed boiled potatoes with a fork. Add GEA Pumpkin seed oil, vinegar, garlic and salt. Mix all together and add washed leaves of green salad.
Ice cream with pumpkin seed oil and caramelised pumpkin seeds
Ingredients (for 6 persons):
1L vanilla ice cream
1 dl GEA Pumpkin seed oil
75 g pumpkin seeds (green, without shell)
50 g sugar
25 ml water
Cooking instructions:
To caramelise pumpkin seeds, bring water and sugar to the boil, add pumpkin seeds to the pan and slowly heat until the seeds swell up and turn golden brown.
Put a few balls of vanilla ice cream in a dessert bowl, add 1 or 2 tablespoons of GEA Pumpkin seed oil per serving and decorate the dessert with caramelised pumpkin seeds.
You can also whip the ice cream in a blender until creamy. While whipping, add pumpkin seed oil and minced caramelised pumpkin seeds.

Fresh cheese with pumpkin seed oil
Ingredients:
250 g fresh cheese
50 g fresh cream
50 g chopped onion
4 tbls GEA Pumpkin seed oil
50 g crushed pumpkin seeds
Salt
Black pepper
Cooking instructions:
Mix all the ingredients in a bowl and serve prepared cheese on slices of fresh bread with some pickles.
